Also known as "sumaki," it has a dark burgundy color and a tangy flavor. Its primary use is in kebabs, usually combined with other spicy seasonings (e.g., sweet paprika, chili, cayenne pepper) or cumin.
We can use it instead of lemon to add acidity and a bit of color to grilled fatty meats, lamb chops, pork chops, pancetta, and chicken thighs.
It provides an excellent flavor to a whole chicken in the oven with garlic and oregano. We use it to add sour notes to marinades, sauces, and salads.
It pairs well with raw onion; for example, we can salt thin slices of onion, mix them by hand, sprinkle with sumac, and combine them with parsley to garnish tomato salads and kebabs.
